Ingredients:

700g baby potatoes
Salt, to taste
3 tablespoons olive oil
2 cloves garlic, minced
2 tablespoons butter
Freshly ground black pepper, to taste
4 tablespoons Killer Condiments Chimichurri sauce
Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 220°C. Place the baby potatoes on a baking sheet and drizzle them with 2 tablespoons of olive oil. Sprinkle with salt and toss to coat the potatoes evenly.
  2. Roast the potatoes in the preheated oven for about 30 minutes, or until they are tender and golden brown.
  3. Remove the potatoes from the oven and let them cool for a few minutes. Using the bottom of a glass or a potato masher, gently press down on each potato to smash it slightly.
  4. In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the minced garlic and cook for about 1 minute until fragrant.
  5. Add the smashed potatoes to the skillet, arranging them in a single layer. Cook for about 5 minutes, or until the bottoms are crispy and golden brown.
  6. Flip the potatoes and add the butter to the skillet. Cook for an additional 5 minutes, or until the other side is crispy and golden brown. Season with salt and freshly ground black pepper to taste.
